Hi everyone! I hope you are all doing well on this wonderful day. I want to first start off by saying this post is for all my 21 and over friends! Today I am sharing the second recipe for some ice pops with alcohol in them. What better than a cocktail on a hot pool day…. a cocktail in ice pop form. This the second recipe in my “Boozy Ice Pop” series. Mojitos are one of my favorite cocktails. I personally love making them with coconut rum, but this recipe with work just as well with just a normal white rum.  I also had some left over pineapple juice I added to some of them, it was really good too!

 

I first tried making ice pops with alcohol last summer, I made mango margarita ones and they were so good! (Don’t worry that recipe will be coming up!).  I want to remind you that most alcohol has a very high freezing point. So what does this mean for your ice pops, the more alcohol you add the more slushy like you pop will be. If you want it more solid, add more of the other ingredients. 

 

To create the ice pops, you can use a ice pop mold like this one! However, I found it was easier to use ice pop bag molds. The ones I used (here) are from Amazon and you throw them away when they done. I got 125 bags for like $11, and they came with a funnel. This made pouring the mix into the baggies so easy. 

 

 

 

Boozy Mojito Ice Pops

Ingredients

3/4 cup of water

3/4 cup of sugar

20 mint leaves ( +extra for garnish)

3/4 cup lime juice

1 cup of rum (I used coconut)

3/4 cup of soda water

1 1/2 cups of pineapple juice (I used 2 Dole 6oz cans)

Directions

1 . The first thing you need to do is make the mint infused simple syrup. Add the water and sugar into a pan on medium heat and stir until the sugar is completely dissolved. Stir in the mint leaves and cover. Let it infuse for about 20 mins or until cooled.  Remove the mint leaves and you have your mint simple syrup.

2. In a large bowl add the mint simple syrup you made, lime juice, rum, and soda water.  Mix well!

3. Add a piece of mint to each bag/mold for a garnish and pour the mixture in.  If you are using the bag, you want to make sure you keep it upright. I ended up putting like 4-5 of the ice pops in a solo cup, and this worked great.

4. Put you ice pops in the freezer. For timing, I ended up keeping them in the freezer over night. By the next day they were frozen and ready to enjoy. Depending on if you add more juice, they might be ready in a few hours.
